Traffic Light Cookies

This was a recipe that I learned way back in school. Fun and colorful! Add in a mix of flavors to tickle your taste buds! Kids will enjoy decorating and if they love jams this is a fun treat for them to keep guessing the flavors!

Ingredients:


For Cookies:

Self Rising Flour - 1/2 cup

All Purpose Flour - 2 cups

Melted Unsalted Butter - 1 and 1/2 cup

Sugar - 1 and 1/4 cup

Vanilla Essence - 1 tsp

Almond Essence - 1/2 tsp

Water - 1/4 cup




Method:


  1. Melt unsalted butter in a large bowl.

  2. Add in the sugar. Using an electric beater whip the sugar and butter for 5 minutes. Start with low speed and increase the speed gradually till sugar blends in with the butter.

  3. Add in the vanilla and almond essence and whip for another 5 minutes.

  4. Sift the Self Rising Flour and all purpose flour in another bowl.

  5. Add this mix to the liquid mixture.

  6. Slowly start kneading with hands. Add water 1 tbsp at a time. Form a dough. Rest this dough for 30 minutes.



  1. Pre heat oven to 325 degree Fahrenheit (163 degree Centigrade). Line a baking tray with butter paper or parchment paper.

  2. On a flat surface roll out the dough. Using a round cookie cutter or a rim of a glass start cutting circles.

  3. Using another smaller cutter or the round part of the decorating tool cut out 3 additional circles.

  4. Gently place them on your baking tray. The second set of circles have to be done carefully so as to not break them. The easiest way to do this batch is place the cookies first on the baking tray and then cut out the additional 3 circles.

  5. Bake the cookies for 20 minutes. The cookies should not be too brown. If baking in batches, you can reduce the oven temperature by 5 degrees when baking the second batch.

  6. Allow the cookies to cool down on a rack.


Jam Filling:



You can make your jams way ahead and keep. Or you can buy one jam or jelly flavor and use that as your filling. I made 3 different Jam flavors (Pineapple, Green Grape and Strawberry)

Pineapple Jam:

Cut Pineapple - 1 cup

Orange - 1

Butter - 1/4 tsp

Sugar - 1 and 1/2 cup

Orange Gel Food Color - 1 drop

Pectin - 4 tbsp


Method:

  1. Blend in the pineapple and orange with 1/4 cup water. I blended it to form a smooth texture.

  2. In a saucepan heat the pineapple mix. Add in sugar and mix till it completely dissolves.

  3. Bring it to a boil. Add in the butter. If there are any impurities it will form a foam on the top and you can remove this using a spoon.

  4. Add in the food color to form a nice amber color.

  5. Add in the Pectin. Cook for 5 more minutes.

  6. Pour this into a clean, air tight glass jar. In couple of days the jam should set.

Green Grape Jam:

Green Grapes - 1 cup

Butter - 1/4 tsp

Sugar - 1 and 1/2 cup

Dark Green or Leaf Green Gel Food Color - 2 drops

Pectin - 4 tbsp


Method:

  1. Remove the stems from the grapes. Rinse them nicely in salt water and then fresh water. Blend the grapes with 1/4 cup water. I blended it to form a smooth texture.

  2. In a saucepan heat the grape mix. Add in sugar and mix till it completely dissolves.

  3. Bring it to a boil. Add in the butter. If there are any impurities it will form a foam on the top and you can remove this using a spoon.

  4. Add in the food color to form a nice green color.

  5. Add in the Pectin. Cook for 5 more minutes.

  6. Pour this into a clean, air tight glass jar. In couple of days the jam should set.

Strawberry Jam:

Strawberries - 1 cup diced (Frozen cut strawberries work really well for this)

Butter - 1/4 tsp

Sugar - 1 and 1/2 cup

Red Gel Food Color - 1 drop

Pectin - 4 tbsp

Method:

  1. I used frozen cut strawberries. Thaw them for couple of hours. Blend the strawberries with 1/4 cup water. I blended it to form a smooth texture.

  2. In a saucepan heat the strawberry mix. Add in sugar and mix till it completely dissolves.

  3. Bring it to a boil. Add in the butter. If there are any impurities it will form a foam on the top and you can remove this using a spoon.

  4. Add in the food color to form a nice red color.

  5. Add in the Pectin. Cook for 5 more minutes.

  6. Pour this into a clean, air tight glass jar. In couple of days the jam should set.


Melted Chocolate Glaze


Ingredients:

White Chocolate - 1/2 bar cut in small pieces

Whipping cream - 3 tbsp


Method:

  1. In a large vessel add water and bring it to a boil.

  2. Take whipping cream in another bowl. Reduce the flame and keep the bowl in the vessel with water.

  3. Add the chocolate and mix till it forms a smooth glazed mix.


Arrange your cookies:

I am adding the video to show how to arrange your cookies. Start with the chocolate glaze and then add your jam fillings. Wait for at least 30 minutes for the cookies to stick and the filling to set. Involve your kids for decorating the cookies! They will enjoy filling in their treats.
