Toasted Oats and Veggie Salad

Colorful, filling, yummy, and a versatile salad that pairs with any food!!


Ingredients:

Baby Cucumbers - 1

Tomato - 1

Red Bell Pepper - 1

Yellow Bell Pepper - 1

Orange Bell Pepper - 1

Steamed corn - 1 cup

Chopped Cilantro - 1/2 cup

Oats - 1 cup

Flax seeds - 2 tbsp

Optional Garnish - Thin Nylon Sev


Salad Dressing:

Lemon Juice - 2 tsp

Olive Oil - 1 tsp

Salt - 1/2 tsp

Pepper - 1/2 tsp

Red Chilli Flakes, Red Chili Powder or Paprika - 1/2 tsp

Chaat Masala - 1 tsp


Method:

  1. Toast Oats in a saucepan for 5 mins on low flame till it turns golden brown. Switch off the flame and add the flax seeds and mix. Keep this to cool.

2.Dice all the vegetables as shown. In a large mixing bowl, add the vegetables.















3. Next goes in the corn. Then add the spices. Pour the Lemon Juice and Olive Oil.


4. Finally add in the Toasted Oats. Add the chopped Cilantro. Give this a quick toss.

5. Garnish on top with Sev.
