A fun twist to the Traditional Karaji/Gujiya. Similar ingredients, baked to perfection that make up a yum sweet crunchy snack
For the Stuffing:
Sweetened Dry Coconut Powder - 1/2 cup
Powdered Sugar - 1/4 cup
Crushed Cardamom - 1 tsp
Crushed Almonds and Pista - 2 tbsp
For the Dough:
All Purpose Flour - 1 and 1/2 cup
Self Rising Flour - 1/2 cup
Ghee - 3/4 cup
Sugar - 1/2 cup
Crushed Cardamom - 1/2 tsp
To make the stuffing, add all the mentioned ingredients into a pan. Add only 1 tbsp of nuts to the stuffing. Stir on low flame till all the ingredients are mixed well. Keep aside to cool.
Next, make the dough. Take a large bowl, add the sugar and ghee and beat well for about 5 minutes.
Add crushed cardamom, both the flours and mix well to form a soft dough.
Grease a baking tray and line it with butter paper or parchment paper.
Take a small ball of dough and roll it between your palms. Shape it to a small bowl.
Add 1 tsp of stuffing and fold to form a stiff cookie. Place it on the Baking Tray.
Preheat oven to 330 degree Farenheit (165 degree Celcius).
Continue making cookies with the rest of the dough. Decorate them with the remaining nuts.
Place the tray in Oven and bake for 20 minutes. After 20 minutes, leave them in the oven for another 2-3 minutes.
Remove and cool the Nankhatais (cookies). Store them in air tight containers.
These are yummy, crumbly with a fun surprise inside each cookie!!
