Spicy Pickled Salad

A tangy and spicy salad with a burst of flavors in every bite!! You can use any vegetable that can be peeled in thin slices for this salad.

Ingredients:
Baby Cucumber - 1
Carrots - 1
Onion - 1/2
Pickled Dressing:
Ginger - 1/2 stick grated
Green Chillies - 1 -2
Vinegar - 1 tbsp
Lemon Juice - 1 tbsp
Salt - 1/2 tsp
Pepper - 1/2 tsp
Sugar - 1/2 tsp
Warm Water - 2 tbsp
Olive Oil - 1 tsp
Method:
Slice all the veggies very thin and add them to a bowl. A peeler works best for the cucumbers and carrots.

Pickled Dressing:
In a small bowl add vinegar. Add in the grated ginger and chopped green chillies.
Add lemon juice, salt, pepper, sugar, olive oil, and warm water. Give it a quick stir.
Pour it over the veggies and give it a quick toss.

Additional Flavor Choices:
I added a spoon of Mango Pickle.
Paprika or Cayenne Pepper goes very well with the other spices.
