Spicy Oats Bhel

A fun multigrain twist to one of my favorite street foods of Mumbai. Have it for a healthy start to the morning or a fun evening snack with tea.
Ingredients:

Oats - 1 cup
Flax Seeds - 2 tbsp
Baby cucumber - 1
Tomato - 1
Onion - 1 small
Green Chillies - 2
Yellow Bell Pepper - 1
Chopped Cilantro - 1 tbsp
Lemon Juice - 1 tbsp
Thin Sev - 1/2 cup
Salt and Pepper to Taste
Red Chilli Powder - 1/2 tsp
Chaat Masala or Raw Mango Powder - about 1 tsp
Method:
Take a heavy bottom sauce pan. Add oats and roast on low flame till it turns golden brown.
Switch off the flame and mix in the flax seeds. Keep it aside to cool down.
Dice all the vegetables and mix them in with the cooled oats mix.
Add in the chopped green chillies, spices, lemon juice and Cilantro. Give it quick toss.
Add Sev in the end and toss to mix it in. Serve chilled!!
Optional Additions:
1 tbsp of Crushed Peanuts for added protein.
You can add Mint Chutney and Sweet Chutney for added flavor.
