Iddiyappam Sev Puris (Rice Noodle Puris)

"Sev Puris" is one of the most popular street foods in Mumbai. I tried this fun and healthy twist to the traditional sev puris that is crispy, yumm, and Gluten Free!!!
Ingredients:
Make you Iddiyappams (Rice Noodles)
Rice Flour - 1 and 1/2 cup
Hot Water - about 3/4 cup
Salt - 1 tsp
Or
Ready made Dry Rice Noodles - 2 cups
Hot Water - just enough to soak the noodles
Method:
If you are using the ready made noodles, just soak them in hot water till the water is completely absorbed.
To make the Traditional Iddiyappams, first take the rice flour in a bowl. Roast the rice flour in a microwave for 3 minutes.
Cool it for 5 minutes. Slowly add water and the salt. Form a dough.
Pass the dough through noodle mold to a plate to make about 1 inch circles. I used the Idly stand. Steam until done.
Bake your Idiyappams:
Pre heat oven to 410 degree Fahrenheit (210 degree Centigrade).
Spray a cupcake baking tray with non stick cooking spray.
Add the steamed iddiyappams to each cupcake mold.
Arrange your Sev Puris:
Ingredients:
Boiled and Mashed Potatoes - 3
Chopped Tomatoes - 2
Chopped Onion - 1 small
Chopped Cilantro - 2 tbsp
Lemon Juice - 1 tbsp
Garlic Chutney or Hot Sauce - 1 tsp
Mint Chutney - 1 tsp
Tamarind Date Chutney - 1 tbsp
Nylon Sev - 1/4 cup
Method:
Assemble the Baked Iddiyappams on a tray.
Add the mashed potatoes.
Add the chutneys. Start with the Garlic chutney and top it with the Tamarind chutney.
Top it with chopped tomatoes, and onion. Add a splash of lemon juice.
Sprinkle the chopped cilantro. Top it with a heaping spoon of sev.
Crunchy, crumbly, and Yumm!!
For kids, skip all the above toppings. My little one had an interesting topping. Add the mashed potatoes. Add some tomato ketchup. Top it with popcorn and Boondi ! :)
