Green Apple - 1

Tamarind Pulp - 1/4 tsp

Whipped Yogurt - 1 cup

Salt - 1 tsp

Coconut Paste:

Grated Coconut - 1/2 cup

Cumin Seeds - 1/2 tsp

Mustard Seeds - 1 tsp

Green Chillies - 2

Dry Red Chilli - 1

Tempering for the Raita:

Olive Oil - 1 tsp

Mustard Seeds - 1 tsp

Curry Leaves - 4-5 pieces

Red Chillies - 2

  • Make the coconut paste first. Add all the ingredients mentioned under Coconut paste to a blender. Add some warm water and grind to a smooth paste.

  • Heat a saucepan in low flame and add the coconut paste. Cook this paste for 5-10 minutes on low flame.

Chop the apple fine.

  • Add them immediately to the paste. Add the tamarind pulp to this. Mix well. Cook for 5 minutes.

  • Remove from flame. Let it cool. Add the cold whipped yogurt and salt to this.

Heat a small saucepan. Add the olive oil. Add in the mustard seeds. Let this splutter. Then add the curry leaves and red chillies. Mix them well. Add this to the Raita.

Serve chilled!

  • Pineapple, and Cucumbers can also be used for this as alternatives. All these require very less time to cook and add a nice crunch to the Raita.

  • Switch yogurt with chilled water to enjoy this as a healthy vegan treat!
