Easy Carrot Cake
An easy Fat free, sugar free and Gluten Free Dessert that is fruity and easy to make!!
Carrots -1 lb.
Apples - 2
Jaggery powdered - 1/2 cup
Water - 1/2 cup
Cardamom crushed - 1/2 tsp
Saffron - few strands
Crushed Mixed Nuts - 1 tbsp
Peel the Carrots. Dice them and run them through a food Processor or grate them fine.
Put these in a big saucepan. Grate the Apples and add them to the carrots.
Warm water. Add the saffron strands, jaggery powder and stir well.
Add this mix and some of the nuts to the saucepan.
In medium to low flame cook this for about 10 minutes till the carrots soften and water evaporates.
Transfer this to a bowl and press it down tight. Cool the mix. I kept it in freezer for about 5-10 minutes.
Once cool, slowly loosen the edges using a knife and invert it to a plate. Garnish with nuts!
It is an easy sweet with a prep time of 10 minutes and cooking time of 10 minutes. Total time including cooling and assembly would be 30 minutes!!
