Crunchy Carrot Halwa

A fun twist to a traditional Indian sweet. Uses very little added sugar. A healthy fruity sweet with a burst of flavors in every bite!!


Carrot Halwa:

Carrots grated - 1 bowl

Milk - 1/2 cup

Clarified Butter (Ghee) - 4 tbsp

Jaggery - 1/2 cup

Apple grated - 1

Vanilla Custard:

Milk - 1 cup

Vanilla custard powder - 3 tbsp

Whipping cream - 1/2 cup

Powdered Sugar - 2-3 tbsp

Oats Crumble

Old fashioned oats - 1/2 cup

Almonds - 2 tbsp


Carrot Halwa:

1. In a flat bottom saucepan, add ghee and roast carrots in medium flame for 5 minutes

2. Reduce flame, add grated apple, jaggery , and roast for another 5 minutes

3. Add 1/2 cup milk and cook in medium flame. The halwa is cooked once it starts leaving sides from the pan. Remove and keep aside to cool

Vanilla Custard (This can be made in advance and refrigerated):

1. In a cup mix custard powder with cold milk

2. In another sauce pan, add the remaining milk, sugar and bring it to a boil

3. Switch off the flame, and slowly add the custard and stir it in. Cook this mix on low flame till milk thickens. Keep this in fridge to completely cool down

4. In a bowl, add whipping cream and sugar. Beat it till forms stiff peaks.

5. Fold in the custard till it is completely mixed

Oats Crumble:

1. Roast oats in low flame till it turns golden brown

2. Crush almonds, and roast them with oats

Assemble your Dessert:

1. In a small bowl, add 1 tsp oats crumble.

2. Next, place 1 tbsp of carrot halwa

3. Add the custard mix in a piping bag and pipe this over the halwa

4. Garnish over with crushed nuts
